Ingredients
  

  • 8 bratwursts
  • 8 hot dog buns
  • 1/2 cup fresh cilantro leaves
  • 1/2 cucumber, diced into half moons
  • 1 jalapenos, thinly sliced

Pickled Carrots

  • 2 cups shredded carrots (pre-shredded/store-bought)
  • 3/4 cup white or apple cider vinegar
  • 1/4 cup water
  • 1 tbsp sugar
  • 1/2 tsp salt

Sriracha Lime Mayo

  • 3/4 cup mayo
  • 1 tbsp sriracha hot sauce
  • 1/2 tbsp lime juice

Instructions
 

Pickled Carrots

  • In a small sauce pan, bring the water, sugar, and salt to a simmer. Pour over shredded carrots in a glass or heat resistant bowl. Let chill in the refrigerator for at least 30 minutes (max 7 days).

Sriracha Mayo

  • Whisk the mayo, sriracha, and lime juice in a small bowl and set aside.

Bratwursts and Assembly

  • Preheat the grill to medium heat. You can also cook in a skillet or in an oven (400 degrees F).
  • Cook the bratwursts for 10-15 minutes or until 165 degrees F in the center.
  • Assemble hot dogs with fresh cilantro, cucumber, sriracha mayo, pickled cucumber and fresh jalapeno.
