Mexican Wedge Salad
Iceburg, wedges topped with crumbled chorizo, avocado, tomatoes, cotija cheese, fresh cilantro and drizzled with an avocado lime yogurt dressing.
Ingredients
- 5 oz. pork or soy chorizo, cooked and crumbled
- 1 avocado, cubed
- 1 head iceberg lettuce, cut into 8 wedges
- 1 cup cherry tomatoes, halved
- 1/3 cup cotija cheese, crumbled
- 2 tbsp cilantro, chopped
Avocado Lime Yogurt Dressing
- 1/4 cup plain yogurt
- 1/2 cup mayo
- 1/4 cup packed cilantro
- 1 tbsp lime juice
- 1/2 avocado
- 1/4 tsp salt
- 2 tsp water
Instructions
- In a food processor or blender, blend the mayo, yogurt, cilantro, lime juice, avocado, salt and water.
- On a serving platter arrange the wedges of lettuce. Top with crumbled chorizo, avocado, cherry tomatoes, cotija cheese, and fresh cilantro. Drizzle with the avocado lime dressing.
