4th of July was…well, a little different this year. Typically you would find me at the beach with a beer in one hand, 10 beers in my belly, and a California burrito in my other hand. Beaches were closed this year and 4th of July parties were a thing of the past. We also welcomed our baby girl in late 2019, so I had a bottle of milk in my left hand and a baby in my right and I wouldn’t have it any other way. This year we had a low key 4th of July gathering at the pool and barbecued. I brought this watermelon pizza and needless to say, it was a hit! .
Watermelon is summer’s candy, so why not enjoy a la mode. This pizza is topped with a sweetened lime sour cream sauce, sliced mango, toasted pepitas, tajin, jicama and pineapple salsa, and fresh mint.
What is Tajin?
Tajin and fruit are a classic Mexican pairing and decided to take these Mexican flavors and turn into a “fruit salad pizza”. Tajin is a common seasoning found in Mexico comprising over chilis, salt, and dehydrated lime. With San Diego bordering Mexico, it is very ubiquitous in our cuisine. It is most commonly used on fruit and street corn, but can be used to season fish, margaritas, or vegetables.
Is there a substitute for Tajin?
If you can’t find Tajin in the grocery store, don’t worry. Simply sprinkle the top of the pizza with chili powder, sea salt, and the squeeze of a half of lime.

Chili Lime Watermelon Pizza
Ingredients
- 1 watermelon, sliced
- 1 mango, thinly sliced
- 1/2 cup pepitas, toasted
- mint leaves, coarsely chopped
- tajin
Lime Sour Cream Sauce
- 1/4 cup sour cream
- 1/4 cup powdered sugar
- 1 tbsp fresh lime juice
Jicama Salsa
- 1.5 cups jicama, finely chopped
- 1.5 cups pineapple, finely chopped
- 1 tbsp fresh lime juice
- 15 mint leaves, chopped
- 1/2 tsp tajin
Instructions
- To make the sour cream sauce, mix the sour cream, powdered sugar, and lime juice.
- To make the jicima salsa, mix the jicama, lime juice, pineapple, mint leaves, and tajin until combined.
- Spread lime sour cream sauce over watermelon slices. Top with thinly sliced mango. Then top with the jicima salsa, pepitas, mint leaves, and sprinkle with tajin.
